Birdie’s Deli was born from years of dreaming and the desperate need for a good sub sandwich in Columbia. Our concept of a traditional deli draws heavily from our favorite delis and sandwich shops in St. Louis and throughout the Midwest.

Many of our ingredients, including the bread and cured Italian deli meats, will be sourced from ‘The Hill’ in St. Louis, where Chelsea and her family were born and raised. 

We aim to bring a neighborhood deli vibe to Downtown Columbia, offering house-made sandwiches, salads, and a variety of smoked and roasted meats available sliced to order by the pound.
